Crockpot Dinner + a Protein Discussion?

In getting back to basics, I decided to take pictures of all my food today. Lately I’ve only been blogging about major meals because my snacks are pretty similar from day to day. But since I’ve been doing so much running I’m trying to figure out the best way to properly fuel myself. I thought this would be the perfect place to begin evaluating.
Around 11 a.m., I took a broke from my busy day and had a large gala apple.
I was starving by 12:15 p.m. I was trying to make myself wait a little longer for lunch, so I’d stay fuller – but I thought it best to follow my stomach and eat when I was hungry. Lunch was leftovers from the Vegetable Casserole and some Kashi crackers for a little crunch factor.
I also had a little treat for lunch. One of the Ghirardelli Squares I received from Michelle. Thanks, again!
I was hungry (again) by 4 p.m. I picked up a few of Stonyfield Farms’ Oikos Organic Greek Yogurt with the coupons they sent. Today was my first try.
The consistency was very similar to Chobani, but I wouldn’t say this yogurt beat my favorite. It was good but wasn’t my favorite. Since Chobani and Oikos are the same price, I don’t think I would buy the Oikos over Chobani. It was still just as rich and filling though (Expect a more detailed review on the blog later…).
I had to take care of my car issues after work today so I left a tad early. Between dealing with traffic and shelling out $$$ (that I was saving for a new computer!), I came home with a headache. Bill was sipping on a Pale Ale IPA, so I asked for a sip. Here’s what I got:
It was really good. I would never consider myself a beer drinker, but I am starting to like it more. I think I might just order a beer once in a while instead of wine when we go out.
Even though I wasn’t in the mood for hot food, Bill had put some chicken and cream of mushroom soup in the Crockpot to simmer throughout the day. We also made some pasta and veggies for sides.
Talk about a big plate!
I asked Bill to give me “a little bit of pasta” – and this is what he gave me. It was actually less than it looks like, as it spread all over the plate due to our watery sauce. Not the best meal in the world. But certainly not the worst.
Protein
I have been researching protein tonight and have figured out that I’m not sure I get enough each day. I think if I ate items with a little more protein, I might stay fuller longer – and not feel so ravenous throughout the day. This, in turn, would help with my running. Since I live a pretty vegetarian lifestyle (no red meat at least), I’m trying to come up with more ways to add protein into my diet.
What are ways that you incorporate protein into your diet? I’m looking for suggestions!
