Kale and Sweet Potato Pasta

One of my goals in life is to have good experiences at the grocery store (a.k.a co-op, for me). I prefer to shop at the co-op because 1) the produce is the best around 2) the store is small and therefore less crowded – most of the time. Tonight’s experience started off very pleasantly, and I was even able to snag a few photos to show you what I fall in love with while shopping.
This is my absolute favorite aisle in the co-op. I am a sucker for buying anything in bulk. Plus they always have these gems and goodies hiding in plastic containers. It’s all about label reading.
Normally this aisle is insanely packed, so I took advantage of my aloneness with the granola, nuts and chocolate-covered almonds (yes, swoon.)
I bought two special ingredients for dinner tonight that I knew I had to use: Annie’s Tuscany Dressing and beautiful red kale.
I chopped up two carrots and one giant sweet potato and threw them in a pan with some kale, salt, pepper, olive oil and tons of garlic. I added the dressing later. This is my new favorite way to cook sweet potatoes. So easy and simple.
The result? Orange and Green Pasta. Or, for the more descriptive, Kale and Sweet Potato Pasta.
Close-up shots of this dish were very, very necessary. This is the best thing I’ve eaten in a good two weeks. I needed a veggie belly hug, for sure.

Now it’s time to get my writing self in gear. I have a 10-page story due in a few days, and it needs my utmost attention.

Wow that looks delicious – must try the kale/sweet potato combo. My pleasant shopping tip – being a NYC-er – is go early or late! Middle of the day on a Saturday or right after work and you will want to pull your hair out. Trust me!

I love going grocery shopping early in the morning on weekdays or close to closing time because it avoids the shopping cart battle. And, like you, I LOVE being able to browse all the bulk foods without feeling like I’m in someone’s way. Glad this past time was a good one for you!
I tend to go grocery shopping at off times… usually before work! Its great in the winter because i can just leave stuff in my car all day!
That looks yummy. My grocery store experiences vary. There is a grocery store literally next door to my house, so I go there for convenience but they never have everything that I’m looking for, so I get frustrated.
That looks delicious! I agree with you about co-op shopping. I don’t have one nearby right now, but I have some favorite co-ops that I always visit back home.

sometimes I have fun at whole foods – but mostly, grocery stores are sooo crowded for me. Whats the name of your co-op?
I used to hate grocery shopping, but now I love it. I go 2x a week, and I don’t even care if it’s crowded or not. I go down every aisle, and I look at almost every product to see what’s new and what’s in season. It takes a good 2 hours – and that’s just one grocery store.
I spy clementines! That makes me quite happy, but not as happy as that dinner would make me. I’ve never tried that dressing, but I’ve loved every single Annie’s dressing I’ve tried.
Every trip to Wegman’s is heavenly for me. I could live there.
I have to try cooking sweet potatoes like that…
So long as I don’t go to Trader Joe’s on a Saturday morning my trips are usually pleasant. I love grocery shopping!

What a great pasta dish. I haven’t had enough kale in my life these days – the perils of no longer being in charge of all the food that comes into my house.
I find most grocery store trips pleasurable, as long as I’m not in a rush and can browse a little – you never know what gems you’ll find.
