Chocolate Zucchini Cupcakes

Hey there Lobster Placematers! I’m Whit and I blog over at Whit’s Getting Fit. It just so happens that I have had the pleasure of meeting Rose in real life, and yes she is just as fabulous as she seems on her blog. I met Rose at the Healthy Living Summit in Boston, and it just so happens that the recipe I am going to share with you guys is the same one I donated for Caitlin’s bake sale benefiting Team in Training.

These are chocolate zucchini cupcakes that I made based off a recipe from Allrecipes.com which can be found here.
Like I said, I did make some adjustments to the original recipe, so the recipe with my changes is listed below.
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 cups cane sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 4 eggs
- 1 cup vegetable oil
- ½ cup water
- 3 cups grated zucchini
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan. In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs and oil, mix well. Fold in the nuts and zucchini until they are evenly distributed. Pour into the prepared pan. Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting.
I use a frosting that has been passed down from my great grandmother, and it is just absolutely the best chocolate frosting EVER.
MAMA BONNIE’S CHOCOLATE FROSTING
- 3 tablespoons cocoa
- 1 ½ tablespoon corn syrup
- 1 tablespoon corn starch
- 2/3 cup canned milk
- 1 ½ sticks butter
- 3 cups sugar
Mix the dry ingredients in a saucepan, then add butter and milk. Bring to a boil over medium heat; boil for 90 seconds. Set the frosting aside, stirring occasionally. It will take a few minutes to set into a workable frosting.
Now granted, if you skipped the frosting on these babies, you’d save some calories and have quite the healthy little treat, but I’ll be honest. Mama Bonnie knew what she was doing in the kitchen. That frosting is to die for. Seriously.

My favorite cake of all time is my grandmothers scratch made chocolate cake and homemade chocolate icing.
