Chickpea Cutlets

There is something so rewarding about getting your hands dirty in the kitchen. Especially when it involves using a recipe from the Veganomicon. I do love this book, but the recipes can be slightly intimidating. One hour of cooking after a long day? Sometimes it doesn’t jive with me. But tonight – a certain recipe did: Chickpea Cutlets. And they only took 30 minutes (!)

Spending time in the kitchen was rewarding for my soul. As you know, I’ve been eating out and traveling quite a bit. I just missed eating something I made for myself.

My camera was on a strange setting when I took the before pictures, and the cutlets ended up looking very green. I’m posting them mainly cause it’s funny.

It’d be great if chickpeas were actually green. Wouldn’t it?

Anyway, the final result was much prettier.

I served mine with a side of broccoli on a lobster placemat, of course. This meal was very satisfying. I ended up going back for seconds of the broccoli to nourish my lately veggie-less soul.

Why do I never seem to tire of chickpeas? Monica, can you relate? :)

Is there a food you just never get sick of?

    Rarely do I get sick of peanut butter!! Best food ever. I miss it dearly when I go without.

    i never tire of chickpeas either…and those cutlets looks awesome. i’ve been intimidated by them because of the wheat gluten…and since i can’t seem to find it. :)

    Mmm I definitely need to make these as I have cut back on meat but still yearn for a burger-like food. I could never get sick of eggplant…well it actually made me sick last week but that STILL hasn’t stopped me.

    I feel the same way about V-con–lots of the recipes seem a bit time consuming. The corn and edamame salad is more my speed–dump and dress.

    Chickpeas are the B-E-S-T that’s why :)

    If you hadn’t said anything I would have thought you’d added brocc to your cutlets… hmmm sounds yummy actually… but that’s def on of my fave recipes from that book!

    I love these things! I also love to use different beans and add different things like BBQ sauce of ketchup in there. It’s a great recipe.

    I just read about your weekend – so much fun! I’m glad you had the chance to hang out with both family and friends. Although the time we often have with them is too short, the moments we do get are always amazing…how’s that for corny?

    Those cutlets disprove the theory that it’s not easy being green…they look delicious! (Sorry, just had to say it.) I have a jar of chickpeas that has been around for far too long – I need to make them into patties or hummus or something, and soon!

    I’ve heard about this recipe and want to try it so bad! they look great, even when they look green :)

    I could never get sick of oatmeal, I don’t think. Or good coffee or chocolate.

    Yummy looking chickpeas as always! Want to know something funny? I never really liked chickpeas until college (when they had them on the salad bar)! Now that I eat them more and more – I feel like I’ve missed out on a lot of years of deliciousness!
