Chicken, Kale and Gouda Wraps

Tonight I was craving stuffed chicken breasts. Until I realized that we bought thin-sliced chicken last week at the store. Shoot. Time to get creative. We decided to make chicken wraps instead!

Ingredients

  • 4 thinly-sliced chicken breasts
  • 2 cups kale
  • 1/4 – 1/2 cup shredded gouda (or cheese of your choice)
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 tbsp. garlic
  • 1 tsp. oregano
  • 2 tsp. olive oil

Directions

1. Saute olive oil and garlic over medium heat for one minute. Add kale and let cook for a few minutes. Add salt, pepper and oregano. Flip and sauté continuously.

2. When mixture is cooked, set aside. Place chicken on a pan.

3. Add kale and some shredded gouda (to taste) to the middle and roll the chicken. Place open end on the bottom.

4. Cook on a baking pan (covered in foil) at 400 degrees for 20-25 minutes (depending on your stove).

We served ours with a side of asparagus.

20-Minute Strength Workout 

I didn’t feel like being stuck in a gym tonight, so I decided to do a quick 20-minute workout when I got home from work. I turned on some MGMT and made up these moves as I went along, based on workouts I’ve seen on other blogs. Note: I was focusing on arms.

  • 1 min: light stretching
  • 2 min: jumping jacks
  • 2 min: bicep curls
  • 1 min: push-ups
  • 2 mins: squats
  • 1 min: jumping jacks
  • 2 mins: lunges with 5 lb weights
  • 2 mins: behind-the-head presses
  • 1 min: jumping jacks
  • 1 min: upright rows
  • 1 min: jumping jacks
  • 1 min: kickbacks
  • 1 min: regular crunches
  • 1 min: bicycle crunches
  • 1 min: light stretching

It was a super quick workout, and I was jumping from idea to idea, but I know I got in a decent workout. I ended up burning 175 calories. We’re planning a very long walk in about 20 minutes, so I will get my cardio in that way.

I am making a book for the lovely Ms. Chandra, who bid on my book in Oh She Glow’s Shop 4 a Cause! Chandra told me that her favorite color is blue, so I went to the store and picked out a few patterns that might suit her. What do you think she’ll like most? Chandra – you are obviously allowed to answer too :)

For some reason, this one screamed Chandra to me. Fun, colorful and classy.

Other question for the night: If you’re on Facebook, how do you feel about “fanpages?” These are the things I wonder about due to my job + blog :)

    ohh the 3rd one is my fav by far!!!!

    Damn that is one good looking chicken wrap…and I dont even eat chicken and its mouth watering! lol

    The wrap looks SO good! I love gouda. Yum!!

    I think the two sided paper is so pretty! It would definitely be my choice. :-)

    I haven’t taken my blog to facebook yet because of my job. Everything I write I write thinking that an editor or reader may stumble upon it, but it’s not something I’m comfortable advertising on facebook for all 400+ of my friends and professional contacts to read. I may start a separate twitter for my blog, too, because I’m sure you’ve noticed I don’t tweet anything about it from my professional username.

    Mmm your chicken looks fab! Asparagus is one of my faves and the best part about being home with my ‘rents is that it grows in their yard, all wild and crazy, but beyond delicious.
