Co-op = Joined!

Exciting news! Bill and I joined the Co-op this afternoon! IMG_7233

I have been wanting to do this for so long, and the Cleaner Life Month challenge gave me an extra push. IMG_7234

The very first thing I noticed while we were shopping was that no one was pushing me around, trying to get past me. That’s my usual experience at the grocery store, so it was amazing to be at a grocery store so mellow on a Sunday. IMG_7236

I was so happy that I tried some vegan lasagna. My goodness, was this the best thing I’ve ever tasted. IMG_7235

The rest of the afternoon I worked on my book for class and then went on a 3-mile walk with Bill. I took him to the Capital Crescent Trail – where he’s never been and I reminisced about all the long runs I did on that trail while training for the half marathon. Although I’m enjoying my gym sessions in the A/C, I can’t wait to start training again.

When we got home, we were both craving salad – which is odd. Bill had been on a “salad kick” lately and even said he wanted to start taking salads to work for lunch. I certainly couldn’t pass up the opportunity. I made the dressing while he tossed the greens. IMG_7268

This dressing may have been my best yet. Ingredients:

  • olive oil
  • red wine vinegar
  • salt
  • pepper
  • thyme
  • garlic
  • lemon
  • oregano
  • capers (they make it!)
  • basil

    I loved this salad. I just love homemade dressing. IMG_7279

Although we both had salad, we did have different toppings. I had cucumbers, mushrooms, some seeds from the trail mix and turkey. IMG_7277

Perfecto!

I’m getting a bit of a sore throat so I think it’s tea drinking for me and an early bedtime. Happy Father’s Day to my Dad – along with all the other fathers out there. Love you and miss you, Dad!

    Hurray for the Co op! Sounds like it will be a great experience!!!

    Even bigger hurray for salads!! they are so amazing in the summer!! I really appreciate you writing out your dressing recipe too! My Mom keeps pushing me to try to make my own since bottled is so expensive!!!

    I’m drooling over the vegan lasagna… and it’s 7:20am. Is that gross?

    So the co-op is just like a natural foods grocery store that requires a membership? For some reason when I hear co-op, I think of random boxes of veggies that you have to pick up. I like the store option better.

    Oh Congrats on joining the Co-op!!! I love mine!!! Its right accross the street from the hospital and opens when I get out of work in the morning so I can stop on my way home. That is sometimes dangerous after working 12 hours all night and being so tired!

    Have fun getting all kinds of fresh foods and such!
