Frittata Time + Scone Video!

Even though I went grocery shopping yesterday, I only picked up a few items knowing that we were going on vacation. I definitely didn’t want to waste food. Therefore, tonight was a great exercise in using the ingredients I had on hand to create something really tasty.

I was really inspired by Kristin’s recent frittata and decided that it had been too long since I made one myself. I had eggs on hand, some frozen vegetables in the freezer (not ideal for the Cleaner Month Challenge but still worth it) and some Gouda (again, not ideal for a frittata –  but make due!). I loosely followed Kristen’s instructions and mixed it all up in a pan, and it looked something like this. IMG_6851

At the last minute, I decided to include the remaining three pieces of this ham. Again, I surprised myself that even though this is a processed food – it’s natural and minimally processed. IMG_6852

I don’t eat a lot of ham, but I was craving ham and swiss sandwiches last week. It was a great addition to the frittata because I didn’t have to add any spices AT ALL. IMG_6856

And now the moment I know you’ve all been waiting for ;) Yes, I have gone over the top with Scone pics today, but this is the best I have yet! A video of Scone eating with his paws! He does this regularly, and I think it’s really bizarre – though I realize other cats do it too. Nevertheless, I finally captured it on video and was totally excited!

If I take this many pictures + videos of my cat, I don’t even know what it will be like when I have a child someday!

    Ha! I love watching my animals do quirky things. Great dinner. Brent ALWAYS has eggs around so frittatas are my “I have nothing to eat” meal.

    LOL – too funny! I’ve never seen a cat do that before! Scone is just too damn cute – he keeps turning around as if to say “HEY – LADY, do ya mind?’ :)

    Why would frozen veggies not be allowed in a clean eating challenge? All the frozen vegetables I’ve seen are just that – vegetables. There’s nothing added, they have simply been frozen, and at the peak of their freshness, so they are just as nutritious as fresh.
