Tuna, White Bean and Leek Salad

Several of you have asked for Bill’s Tofu Marsala recipe, and I am not one to disappoint. Below is our quick gchat conversation that’s been copied and pasted. Woo! I thought I’d get this out of the way before I show you my DELICIOUS LUNCH!

add 1 scalion
cut butter and flour in half
me: ok
Bill: 1 cup broth
1/2 marsala
me: is that everything?
Bill: yup
and i didnt cook it as long
i just let it reduce

Tuna, White Bean and Leek Salad
I’m not sure what’s been going on with me this spring, but I’ve had tuna salad on the brain. I keep trying new variations to see what I like. This one might be the winner.
Raise your hand if you love leeks!
Ingredients:
- 2 cans tuna
- 1 can white beans
- 1/4 cup leeks
- salt and pepper to taste
- 1/2 lemon (juice)
- fat free mayo (a couple tablespoons)
I decided to have mine in wrap form with some leftover salad.
I definitely put too much vinegar in this salad, but it’s still edible.
Gosh, all this deliciousness, and I’m still hungry. For afternoon snacks I have string cheese, an apple and yogurt. I may be digging in early.
How do you feel about bolded words in blog entries? I think I went bold crazy for a minute so I decided to give it a rest. I realized I was bolding words just for the sake of it! Is this something that annoys you? Truth!

If a post is really really long, I think bolding helps keep the reader from getting super lost in all the text. But sometimes all the bolding and colors and different font sizes can get outta hand.
The tuna salad looks lovely all fancied up!

Hehe, I love the question, ’cause I used to bold like crazy and then I got kind of sick of it and toned it down. Looking forward to hearing what everyone says!
Sometimes I notice bolded words and I think “what is the point of bolding that?” But for the most part, I don’t actually notice one way or the other. Tuna salad sounds wonderful. It’s amazing how often I forget certain foods that I love even exist.

Thanks for the recipe! Your salad looks amazing! I like bold, but going overboard doesn’t work. It’s tough to gauge though, when you’re writing in wordpress, as you don’t see the whole thing.
I’ll admit it; I’m not a fan of bolding words especially when it’s like a word from every other sentence.

As long as bolding is used in moderation I personally find it super helpful when reading through other people’s blogs, especially when I’m severely behind in reading and have a whole bunch of back entries to skim through

Your tuna salad looks great! I actually just whipped up a batch for lunch tomorrow … didn’t have mayo or yogurt so I decided to use hummus! Did 1 can tuna, 2 T hummus, salt and pepper, chopped carrot, onion, pickle …. tastes good!!
