Day 2 of Lunch Rehab: A Funky Veg Salad

First – a welcome to any and all new readers! I appreciate you stopping by to see what’s on my placemat. I have successfully added most of you to my Google Reader + Blog list, so hopefully I can start learning more about you too! Thanks again for commenting.

Second – I was so excited to eat lunch today!

Lunch packed a veggie-filled punch as I made this funky and fresh salad. I had fun last night just seeing what in the fridge and deciding what to toss together. Check out my mix:

  • Edamame
  • Chickpeas
  • Cucumbers
  • Carrots
  • Peppers
  • Salt, Pepper, Italian Seasoning, Parsley
  • 2 tsp. Olive Oil

I have decided that my life is not spicy enough.

I cut and peeled and mixed these ingredients together and within 20 minutes I had a nice vegetable salad to bring with me to work today:

The carrots were a little hard to eat because of their shape – next time I’ll slice ‘em. Oh, and I can’t forget that today was my first blogger experience with a flat-out wrap!

I have had these before, but it was literally years ago. I was happy to try them again! I can’t believe how low in calories these wraps are! Plus, I also ate the other half of my orange from this morning’s breakfast:

I’m not sure who I’m becoming with all these fruits and veggies, but I am certainly loving it.

For the Love of Oats has really been helping me get through the week and reminding me to learn how to love myself! So far her posts have been about breathing and invoking joy, and I have found both very useful! She definitely deserves a shout-out for being ultra-inspirational this week.

I also found this article last week and never had time to post it. In, “Add Nuts to Your Diet with Sauces, Not Snacks,” The New York Times suggests eating nuts in spreads – rather than as a snack – to ensure you don’t eat too many. I like the sounds of that.

Question: How do you eat nuts? Snack or spread?

    Hi Rose, The wrap looks amazing. I love wraps and if you fill em up with veggies there’s not many calories added.

    In answer to your question about nuts, unfortunately I don’t like nuts on their own or mixed in with anything. I’ve tried almonds, but I’ve never fancied them since. Boo Hoo!

    I really wanna try those wraps! I’ve heard so many good things about them. They need to come to NYC now!

    I usually eat nuts in spread form. I like nuts as a snack, but I am so picky about what kind I like so I tend to stick with spreads.

    your lunch looks better than mine… i’d say most of my nuts come in butter form, straight up, or in baked goods. i should get better at working them in, how bout pesto?

    yummy lunch!

    I like them both ways – I usually use whole nuts in oatmeal, but in spreads any other time.

    Hi Rose :)
    I saw you asked about the pita chips I was eating – I love them! They aren’t greasy at all, but still salty – which I appreciate. I get them from TJ’s. The only downside is a serving is only 7 chips and I’m normally a volume eater so that’s low to me.

    Love the salad, it looks so good.

    I like nuts whole and in spreads, but I always have the spreads around so that’s what I end up eating!

    I am a peanut butter gal myself!!! Its an addiction of mine, unfortunately!!!

    What kind of wraps are those that you ate for your lunch? They look so yummo!!!!

    Ohhh, delicious lunch.
    Good idea with nuts, I eat nut butters and nuts as a snack. More spreads would be yummy tho!

    I eat nuts whole but I just got a jar of almond butter AND PB so I’m gonna move on to spreads more!

    If you are looking for a new spice, Cumin is really good. It goes great with Mexican flavored things, like black beans.

    I’m not a big fan of nuts or nut spreads. I like almonds as a pre-workout snack, because they give me energy but aren’t too filling.

    Ooooh, like the salad (I’d leave out the peppers though). Looks simple and tasty :D

    As for how I eat nuts? Both. I only really eat nuts as a snack at work, and because I portion that all out before I leave, I can’t really overeat them. I also like to use them to sprinkle on salad or oatmeal, so again, not alot. And obviously, nut spreads are awesome.

    Mmmm…that salad looks delicious! I just tried the flat out wraps yesterday for the first time and am totally impressed. Especially with the calorie count!

    I eat nuts as a spread mostly, but sometimes sprinkled on salads or oatmeal. I read that NYT article too and am intrigued by the idea of a nut-based pasta sauce. Yum!

    I love the noodle carrots. I am sorry they were hard for you to eat.

    I guess I eat nuts in spread form because once I start with a handful of nuts, there is no end in sight.
