Butternut Squash and a Tofu Medley

Tonight went something like this: I wanted squash. Bill wanted tofu. And so, we compromised by making this dish together.
I got the squash ready as soon as I walked in the door from work – face down on a pan with a bit of water, then covered with foil.
Can I count cutting squash as an arm-activity? What a workout.
We really debated on what to mix with the tofu, and we somehow came up with mushrooms and spinach, mainly because that’s what we had in the kitchen.
Ingredients
- tofu
- spinach
- mushrooms
- olive oil
- balsamic dressing
- garlic
- soy sauce
- green onions
- salt, pepper
Directions
1. Steam mushrooms/spinach together in a separate pan
2. Saute tofu in garlic, olive oil, balsamic dressing, soy sauce, a touch of salt and pepper
3. Combine both pans, toss with green onions
Thoughts?
I really liked the mix of sweet and sour between the squash and balsamic with the soy sauce and garlic. I will definitely be making this dish again.
I was the only one brave enough to make mine in a squash boat. I forgot how heavy squash can be! I only hate half and mashed the other for tomorrow’s lunch.
Dinner Date
Cooking dinner somehow turned into a Wednesday night date between Bill and I. We had fun at the table by:
Checking our our new stain resistant tablecloth…
…taking classic pictures of us eating squash…
…and dreaming about squash.
…getting tired of squash…
…almost falling asleep in squash….
…looking ghostly with squash….
…and finally hiding from the squash.
The Date Continues
Our impromptu date only got better by having to take a trip to the gas station to fill up the tire pressure on my car. A light went on this morning; I didn’t know what to do about it – and of course Bill did. I have no photos from that event, but I do have a photo of some pretty paper I bought at Plaza after work today. I justified this purchase by saying I’d make a book for someone special.
