Butternut Squash and a Tofu Medley

30 Oct

Tonight went something like this: I wanted squash. Bill wanted tofu. And so, we compromised by making this dish together.

10.29.08 023

I got the squash ready as soon as I walked in the door from work – face down on a pan with a bit of water, then covered with foil.

Can I count cutting squash as an arm-activity? What a workout

We really debated on what to mix with the tofu, and we somehow came up with mushrooms and spinach, mainly because that’s what we had in the kitchen.

Ingredients

  • tofu
  • spinach
  • mushrooms
  • olive oil
  • balsamic dressing
  • garlic
  • soy sauce
  • green onions
  • salt, pepper

Directions

1. Steam mushrooms/spinach together in a separate pan
2. Saute tofu in garlic, olive oil, balsamic dressing, soy sauce, a touch of salt and pepper
3. Combine both pans, toss with green onions

Thoughts?

I really liked the mix of sweet and sour between the squash and balsamic with the soy sauce and garlic. I will definitely be making this dish again.

I was the only one brave enough to make mine in a squash boat. I forgot how heavy squash can be! I only hate half and mashed the other for tomorrow’s lunch.

Dinner Date

Cooking dinner somehow turned into a Wednesday night date between Bill and I. We had fun at the table by:

Checking our our new stain resistant tablecloth…

10.29.08 035

…taking classic pictures of us eating squash…

10.29.08 041

…and dreaming about squash.

10.29.08 056

…getting tired of squash…

10.29.08 051

…almost falling asleep in squash….

10.29.08 052

…looking ghostly with squash….

10.29.08 042

…and finally hiding from the squash.

The Date Continues

Our impromptu date only got better by having to take a trip to the gas station to fill up the tire pressure on my car. A light went on this morning; I didn’t know what to do about it – and of course Bill did. I have no photos from that event, but I do have a photo of some pretty paper I bought at Plaza after work today. I justified this purchase by saying I’d make a book for someone special.

Awards

I still never officially put this on my blog, so I’m going to now. Thanks again, Mi!

This may not make sense, but I’d like to dedicate this award to someone who reads my blog daily and doesn’t have a blog - that’s you, Mom! I give you a Brillante Award for reading this every day and caring about me. Love you!

I’m out folks. Goodnight!

I love the impromptu date pictures! The butternut squash and tofu combination is totally original – it sounds great, though!

Giving your mom the award is a great idea! Congratulations Rose’s mom!

Oh, and I know RhodeyGirl and Kath already gave you the advice…but I use CalorieKing, too! I love it because that’s how I’m able to get calorie counts for all of the recipes that I post on my blog! It’s very useful :o ) Let me know if you have any other questions! I will tell you, though, that if you’re willing to wait they usually have a New Year’s special so it’s cheaper!

And last but not least, I LOVE your oatmeal stories! I don’t think you’re a whack job in any way, shape or form :o ) Creative genius is more like it!

your dinner looks so good – i’m always surprised at how rich squash is too, being a veggie and all.
