Feta Turkey Burgers and Kale

I was in the mood for a big ole’ burger tonight. We decided to opt for the leaner version – using turkey.
I must be in love. My burger turned out heart-shaped. My side of Kale got lonely, so he went and found a friend.
If only I had thought about including kale in this turkey burger mix. But there’s always a next time. Here’s one of the easiest recipes ever!
- 1 pound ground turkey
- 1/3 cup feta cheese (or mozzarella)
- 1/3 cup chopped onion
- salt and pepper to taste
- 1 teaspoon (or so) of rosemary
- NO BINDING INGREDIENT NECESSARY!
- Add kale, I think it’d be good
Mix it all up in a bowl with your hands, form into patties and toss it on your grill (george foreman for me).
We also nibbled on part of this large cheese plate before dinner.
After we got home from seeing the dog lady (and her HUGE mansion!!!), I did some homework for a little while and then hit up the gym. Before the gym I had a quick snack to hold me over – a blueberry crisp Clif bar.
I ran 3 miles on the treadmill at the apartment gym and then did about 10 minutes on the bike. I’m actually glad I opted for an indoor workout. It was super hot out this afternoon! I actually did a little homework outside before I went to the gym and remembered that, despite the heat, there is still one official sign that summer is over:
A person-less swimming pool. I’m still kicking myself for never actually getting in the water this summer.
Oh, and another reason I know summer is over:
Bill has taken over the dining room table (with my OK) with his schoolwork. Ah, summer break. How I will miss you.

I love adding those kind of greens to burgers… i often add broccoli rab to veggie burgers on a sammie… it is a great addition!

Oh my goodness…turkey and feta. I will definitely try these and maybe use spinach!
It was sooo gross out this weekend! Indoor workouts were definitely the better option. Love that feta burger AND the presentation of the crackers and cheese.
