Walnut Encrusted Salmon with Sweet and Savory Kale, Carrots, and Potatoes

Because both salmon and kale were on sale at Whole Foods today, I picked both up and decided to make something with them for dinner. I found this recipe for the salmon and this recipe for the kale and tried to transform them into something Bill and I would enjoy. Here are the results:
Walnut Encrusted Salmon Recipe (serves two)

Ingredients
- 1/3 cup walnuts
- 1 tbsp bread crumbs
- 1 tbsp grated lemon rind
- 1/2 tbsp olive oil
- 1/2 tbsp chopped fresh dill
- Salt and pepper to taste
- 2 pieces of salmon
- 1tsp dijon mustard
- Lemon juice
Directions
In a food processor, add walnuts, bread crumbs, lemon rind, oil, dill and salt and pepper to taste; pulse until crumbly (mixture should stick together). Set aside. On the pan, place salmon fillets skin side down and brush the tops with dijob mustard.
Divide crust mixture into four; press onto mustard. Cover salmon with plastic wrap and refrigerate at least 15 minutes or up to 2 hours. Bake at 350°F [180°C] 15 minutes or until salmon flakes with fork. Garnish with dill.
Sweet and Savory Kale, Carrots, and Potatoes (serves two)

Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 2 teaspoons white sugar
- 1 tablespoon cider vinegar
- 1 cup chicken broth + 1/2 cup water
- 4 cups kale
- 1 cup sliced red potatoes
- 1 cup carrot pealings
Directions
Heat olive oil in a pan over medium heat. Stir in the garlic and potatoes; cook and stir about 5 minutes. Stir in the mustard, sugar, vinegar, chicken stock, and water and bring to a boil over high heat. Stir in the kale and carrots, cover, and cook about ten minutes until wilted. You will need to cook the kale without a lid for about three minutes at the very end so it soaks up the water.
The salmon + kale combo turned out great. I was happy that I altered these recipes as otherwise they would have been too oil-heavy. I still think there was a bit too much olive oil on the kale, so I’d cut that down to 1 tablespoon. What I liked about tonight’s dinner is the dijon mustard that tied the two together. As I noted (twice) above, these recipes are not my own – just transformations of someone else’s.
In other news… I did go to the gym this afternoon and ran 4 miles on the treadmill. I plan on lifting some of my dumbbells tonight. I really need to research an at-home lifting regime. I keep saying I’ll do it and keep putting it off. I can tell I haven’t been lifting! I also had a Light Tea Pom after my workout.
I’m happy that Pom is offering their beverages in plastic containers but I miss the glass! I loved having a souvenir after I was done drinking. I wonder if they’re done with glass entirely? I didn’t see any in the store.
As for posting tomorrow… I think I am going to wait until the end of the day to do so. I want to make sure I get to work on time and all of that stuff, so it will be a microwaved bowl of oats and just the basics. Catch you tomorrow night!

As for Whole Foods and Trader Joes… I go to them for things like cereal, PB, crackers, etc. Their store brand items, or products I can’t get anywhere else!
The whole foods where I live DOES sell chobani though…sorry you can’t find it!
Just kidding… I forgot that you said you COULD find it at Giant. By the way, I don’t know if you’ve tried the TJ’s greek…but it is AMAZING!
I have not seen the Pom glasses in weeks! I loved them because they were so reusable – like the old Welch’s jelly glasses when I was a kid with the cartoon characters.

I don’t know if you saw, but I’ve been doing some of the “Create your Own” workouts from Women’s Health. I like it because I can pick and choose from different things and many don’t require fancy equipment.
wow, this looks like my dream dinner (minus potatoes…not very keen on them) this salmon recipe looks delicious, and salmon is like a god to me! i also have kale in the fridge so i may adapt this recipe and create something similar. thanks!
