Asparagus Frittata

Bill and I are going to Pennsylvania for the weekend and decided we needed to use the asparagus quick! I found a recipe for Asparagus Frittata here. It was fantastic, a bit too salty, but that’s how I like it. Next time we’ll cut the salt down to 1/2 teaspoon for Bill. This was the perfect meal post lifting and running at the gym. WSC didn’t have air conditioning yesterday, and I didn’t realize this until about five minutes into my run. I kept going, drenched when I hit the weight bench. I treated myself to a Whole Foods trip afterward :) Ah, vegetables and air conditioning.
