Vegetarian Tacos

I wanted to start this blog by mentioning that I am an opportunistic vegetarian. If the opportunity presents itself, I will eat vegetarian. It just so happens that cooking in my own kitchen gives me the option every night! Don’t get me wrong – I still like chicken and fish. But I won’t touch red meat (too many years of growing up on my grandparents’ farm…) Thankfully I have Morning Star Crumblers to fill me like some red meat would (and honestly, I think it tastes so much better!)

Tonight, after going on a nice 30-minute run, I made black bean tacos using the Morning Star crumbles. I wrapped the mixture in whole wheat tortillas and baked them for about 10 minutes. I really like baking soft shell tacos because it gets a nice crunch to it; I prefer this method over the often-too-hard crunchy shells. I ate the taco with a nice side of broccoli.
