Tofu Tuesdays

(Boyfriend) Bill and I have deemed Tuesday night as Tofu night. It seems Tuesday nights encompass everything I love – Kickboxing class, Tofu, and open mic night at the College Perk Coffee House. Tonight Bill cooked while I was at the gym. I have discovered that the best thing about the Washington Sports Club in Silver Spring is the Whole Foods across the street. I stopped there on Sunday morning and randomly bought some bok choy, something I’ve been meaning to cook since watching Top Chef more than a year ago. Bill made it using this recipe.

Bill used one tablespoon of soy sauce, and the bok choy was still too salty. I’d recommend using less soy and definitely using BABY bok choy. It’d make for an easier meal, eating wise.
I enjoyed a nice iced latte at the coffee house but unfortunately I didn’t have my placemat, so no photo. Just think about skim milk with some great espresso and ice cubes bobbing around. Yum..
